Eleni Ioannou graduated from the Department of "Molecular Biology and Genetics" in the Democritus University of Thrace in 2011. In 2014, she completed her postgraduate studies in the "Applications of Molecular Biology - Molecular Genetics - Diagnostic Markers" program of the Department of Biochemistry and Biotechnology in the University of Thessaly. She then, completed her PhD thesis in both the Institute of Biological, Environmental and Rural Sciences (IBERS) at Aberystwyth University and the Catalysis and molecular enzymatic engineering group, LISBP, INSA de Toulouse, entitled "Development of novel enzymatic tools for the production of xylose- based products within a lignocellulosic biorefinery concept". Her main research area focuses on the structure-function relationship of proteins involved in the degradation of lignocellulosic materials. She has also been employed as a postdoctoral researcher at Aalto University in Finland. She is a scientific associate of the Department of Dietetics and Nutrition and the Department of Food Science and Nutrition in the University of Thessaly, as an external instructor. Her overall work resulted in 9 scientific publications (h-index=7) and 9 participations/presentations in Greek and international conferences.
